Wheat Free Coconut Bread

I found a couple of awesome recipes for this type of ‘bread’ using no wheat products. Here’s my version which mixes up what I thought have been the better of the various ones out there. Very simple to make and very tasty

Ingredients:

  • 3/4 cup coconut flour
  • 1/4 cup of melted coconut oil
  • 1/4 cup of melted butter
  • 6 eggs
  • 1/4 cup milk (adjust to moisture level)
  • pinch salt
  • pinch cinnamon
  • sugar & honey to taste

Steps

  1. Mix all dry ingredients into a bowl
  2. Crack eggs into another bowl & whisk, then add to dry bowl
  3. Melt butter and coconut oil in the microwave, doing to in 15 second waves until it just melts
  4. Add melted oils to the rest of the mixture and mix thoroughly
  5. Add some of the milk to adjust consistency of the ‘dough’
    You’re looking for a cement consistency
  6. Place mixture into a greased baking dish
  7. Place in a pre-heated oven at 350°F for 40 minutes
  8. Take out and let cool.
  9. Serve with some butter and honey. ENJOY!
